Simply spam the Light Attack-button and move on. But as you progress even the basic enemies become stronger. Keeping the shield up most of the time can be a good defense strategy, but there are two things to consider. This only works, if your shield has a physical defense of 100%.
Broadly speaking, you may want to fight up close, from a distance or combine the two. If you're a brawler, choose a Knight. If you prefer to fight from a distance, choose a Sorcerer.

Dark Souls 1 PvP was pretty much backstab fishing only. Nobody really tried to hit the enemy with a regular attack. Therefore the fights were usually two people rolling around and into each other. It was a lot easier to pull it off, because of multiple reasons.
They made it harder to backstab. Some enemies you can circle on the right, others left. The Lothric Knights punish you for circling right with a shield bash. Some enemies you have to block them and they have a long deflection time that gives you a moment to backstab. Good luck!

Not sure how this would effect pvp, but in pve it's pretty common for me to be fighting a dude and my character gets a random backstab animation and i'm slammed in the back by multiple attacks. It's pretty frustraiting to die like that when you seriously don't want to backstab, you just want to kill a dude and dodge.
